Why Add Cottage Cheese to Brownies?
I know-cottage cheese in brownies might sound a little weird at first. But trust me on this one. You won’t taste it at all! What you’ll get instead is a batch of super moist brownies with a soft, slightly creamy texture and a bonus protein boost. It’s one of my favorite ways to sneak in a little extra nutrition without sacrificing flavor.

- Semi-Sweet Chocolate Chips: These give the brownies a rich, chocolatey base. You can also use chopped chocolate, as you are going to melt it anyway.
- Unsalted Butter: Melted together with the chocolate for that classic brownie richness. Feel free to swap with coconut oil.
- Cottage Cheese: The star of the show! It makes the brownies super moist and adds a creamy texture. Go for full-fat cottage cheese for best results.
- Milk: Adds extra moisture to the batter. Any type of milk will work-dairy or plant-based. I love to use oat milk or a high-protein soy milk.
- Cocoa Powder: Use unsweetened cocoa powder for deep, rich chocolate flavor.
- Caster Sugar + Brown sugar: These two together give the perfect balance of sweetness and a little depth from the molasses in the brown sugar. If you’ve got a sweet tooth, just double the amount.
- All-purpose flour: Feel free to use whole wheat flour or spelt flour for a more nutritious twist.

- ¼ cup unsalted butter
- 1 cup cottage cheese I used 4%
- 1 egg
- ¾ cup milk I used high protein soy milk
- ½ cup cocoa powder
- 2 tablespoons caster sugar use 4 tablespoon for a sweeter brownie
- 2 tablespoons brown sugar use 4 tablespoon for a sweeter brownie
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (180°C). Line a square 8×8 inch (20×20 cm) baking pan with parchment paper or grease it lightly.
- Melt the butter and chocolate together in the microwave or over a water bath. Make sure it’s not too hot – if needed, let it cool for a few minutes.
- Add the melted chocolate mixture, cottage cheese, egg, milk, cocoa powder, sugar, and vanilla extract to a food processor. Blend until smooth.
- In a separate bowl, combine the flour, baking powder, and salt. Add the wet ingredients and stir using a spatula until just combined.
- Pour the batter into your prepared pan and smooth out the top. If you like, sprinkle with extra chocolate chips.
- Bake for 25 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
