Tasty homemade chicken nuggets with some grated carrot added in for extra nutrition. Great for batch cooking and freezing.

If you have a chicken nugget obsessed child then try these homemade nuggets that also pack in some veggies.
There’s nothing wrong with serving up shop bought nuggets, we all need some freezer staples to fall back on for busy days. But if you want to try making some yourself these are a great start.

Homemade Chicken Nuggets Recipe
The full recipe with all measurements and ingredients is in the recipe card towards the bottom of this post. I’ve included some step-by-step photos here as that might also be helpful when making them.

- Add chicken mince, dried breadcrumbs and some herbs and spices to a bowl and mix well.

- Finely grate a carrot.

- Add the grated carrot to the bowl and mix again.

- Take a heaped tablespoon of the mixture and from into a nugget shape.
Cooking Instructions
These nuggets can either be cooked in the oven or in the airfryer.
Oven Instructions – place on either one large or two smaller baking trays with have been lined with parchment paper and sprayed with a little spray oil. Bake in the oven at 180c for 20 minutes.

Airfryer Instructions – add the nuggets to the airfryer and spray the top of them with a little spray oil. Airfry at 180c for 10 minutes.
You may have to cook these in batches depending on the size of your airfryer.

Storing & Freezing
Leftover nuggets can be kept in an airtight container in the fridge for up to 2 days and reheated in the microwave or airfryer.
These nuggets can also be frozen. Freeze them on a plate or tray before cooking, ensuring they aren’t touching. After a couple of hours transfer them to a freezer bag and store in the freezer for up to 2 months. Cook directly from frozen adding a few extra minutes to the cooking time.

Description

Ingredients
- Spray oil
- 500g chicken mince
- 40g dried breadcrumbs
- ½ tsp oregano
- ½ tsp garlic granules
- ¼ tsp smoked paprika
- Salt and pepper
- 1 medium carrot

Instructions
- Preheat the oven to 180c / 390f. Line one large or two smaller baking trays with parchment paper and grease with a little spray oil.
- Add the chicken mince, dried breadcrumbs, oregano, garlic granules and smoked paprika to a large bowl and mix well.
- Season with a little salt and pepper.
- Finely grate the carrot and mix that in.
- Take a heaped tablespoon of the mixture at a time and form into a nugget shape, then place on the lined tray.
- Repeat with the rest of the mixture. You should be able to make 22 nuggets.
- Bake in the oven for 20 minutes.
- You can also airfry at 180c / 390f for 10 minutes. Spray the top of the nuggets with a little spray oil.
- Serve immediately.
