We all need some super speedy dinner ideas when we have to get a dinner on the table quickly for the kids and this recipe is just perfect for those days.

There’s just 5 ingredients and the pasta and butternut squash is cooked together in one pan, saving you time on washing up too!

I used frozen butternut squash cubes which are handy to have in the freezer for meals like this. Much easier than chopping up a whole squash in my opinion but you can use fresh if you like.

Butternut Squash Pasta Recipe

The full recipe with all the ingredients and measurements in towards the bottom of this page but I’ve also included some step by step images here which might be helpful.

  1. Add the pasta and butternut squash to a saucepan, cover with boiling water and cook then drain.

  1. Add the cooked butternut squash to a blender with cream cheese, milk, garlic granules and a little salt and pepper to taste.

  1. Blend into a sauce then pour this onto the pasta.

  1. Mix well and it’s ready to serve.

Storing & Freezing

This pasta is best eaten immediately after cooking.

However the sauce on its own (without the pasta) keeps well, either in the fridge for up to 2 days or it can be frozen for up to 2 months. Defrost in the fridge overnight and reheat gently on the hob.

Ingredients

  • 200g pasta
  • 200g frozen butternut squash
  • 60g cream cheese
  • 100ml milk
  • ¼ tsp garlic granules
  • Salt and pepper

To serve:

  • grated cheddar cheese

Instructions

  1. Add the pasta and frozen butternut squash to a saucepan on the hob with boiling water.
  2. Bring to the boil and simmer for about 8 – 10 minutes until the pasta is cooked.
  3. Drain well, then add the pasta back into the saucepan. 
  4. Add the butternut squash to a blender along with the cream cheese, milk, garlic granules and a little salt and pepper.
  5. Blitz until you get a smooth sauce then pour this into the pasta, mixing well.
  6. Serve immediately with a little grated cheese on top.
