Broccoli can be a tricky vegetable for kids but mixed into the cheesy sauce it makes it a lot more palatable.

Broccoli Cheese Quesadilla Recipe

The full recipe with all the measurements and instructions are in the recipe card towards the bottom of this post but I’ve also included some step by step images here that you might find helpful.

  1. Cook some broccoli and sweetcorn in a saucepan on the hob then drain.

  1. Chop or mash the broccoli and add it to a bowl with cream cheese, grated cheese and garlic granules.

  1. Add a wrap to a frying pan and top with the cheesy broccoli mixture. Place another wrap on top.

  1. Fry on either side for a couple of minutes then cut into 6 triangles.

It’s then ready to serve up for a tasty hot lunch at home. I serve it with some chopped veggies like carrots and cucumber and some fruit.

Storage

You can keep leftover quesadillas in the fridge and reheat again on the hob. But they are best eaten immediately after cooking.

Description

An easy lunch recipe for kids that packs the veggies in. Broccoli and cheese quesadillas with some sweetcorn too!

Ingredients

  • 100g broccoli
  • 40g frozen sweetcorn
  • 50g grated cheddar cheese
  • 3 tbsp cream cheese
  • ¼ tsp garlic granules
  • 2 large tortilla wraps

Instructions

  1. Chop the broccoli into small florets and place in a saucepan of boiling water on the hob.
  2. Simmer for 5 minutes and in the last minute of cooking add the frozen corn.
  3. Drain the vegetables and add them to a bowl.
  4. Cut or mash the broccoli into small pieces.
  5. Add the grated cheese, cream cheese and garlic granules and mix well.
  6. Add one of the tortilla wraps to a large frying pan.
  7. Add the broccoli mixture on top, spreading out all over the wrap evenly.
  8. Add the second tortilla wrap on top.
  9. Fry on a low heat for a couple of minutes on either side until browned.
  10. Cut into six triangles and serve.

Notes

These Quesadillas are best eaten immediately after cooking
