Some will argue that Cauliflower Cheese doesn’t belong on the Christmas dinner table. But if you like it then go for it I say!

If you’re planning on serving it up this year then I have the most delicious and decadent recipe. And you can also make it ahead to save some time on Christmas Day itself.

Can You Make Cauliflower Cheese Ahead

Yes you absolutely can!

Roast the cauliflower, make your cheese sauce and assemble in a dish. Once it has cooled wrap it in cling film and it will keep in the fridge for up to two days.

Then when you’re ready to cook, just pop in the oven.

Cauliflower florets in a baking dish ready for the rest of the ingredients to be added on the top.

How To Make Cauliflower Cheese

The full recipe with all measurements and instructions are in the recipe card towards the bottom of this post. I’ve also included some step-by-step images here.

  1. Whilst the cauliflower is roasting, melt butter in a saucepan and add some flour, cooking for a minute.

  1. Add milk, a little at a time and whisk well. Cook for a couple of minutes until the sauce thickens.

  1. Add cheese, dijon mustard and a little salt and pepper.

  1. This is the kind of consistency which you are looking for.

Transfer the roasted cauliflower into a smaller oven dish and pour on the cheese sauce.

At this point you can pop it in the fridge until Christmas Day.

And when you’re ready to cook it, add a little more cheese and some panko breadcrumbs to the top.

Can You Freeze Cauliflower Cheese

Technically you can freeze cauliflower cheese, rather than storing in the fridge.

However freezing can affect the consistency of the cheese sauce, and sometimes it will split. It can also become more watery.

So personally I don’t like to freeze it but it’s totally up to you.

Description

Ingredients

  • 30g grated cheddar cheese
  • 15g panko breadcrumbs
  • 1 extra large cauliflower
  • 1 tbsp oil
  • 50g butter
  • 50g plain flour
  • 500ml milk
  • 80g grated mature cheddar
  • 50g grated Red Leicester
  • 1 tsp dijon mustard
  • salt and pepper

To top:

  • 30g grated mature cheddar
  • 15g panko breadcrumbs

Instructions

  1. Preheat the oven to 200c fan.
  2. Cut the cauliflower into small florets and add to a large roasting dish and toss in the oil.
  3. Bake in the oven for 17 minutes.
  4. In the meantime make the cheese sauce by melting the butter in a saucepan on the hob.
  5. Add the flour and cook for 1 minutes, mixing continuously with a spoon.
  6. Add the milk a little at a time, whisking as you go until there are no lumps.
  7. Cook for a minute or two until the sauce has thickened.
  8. Add in the grated cheddar and grated Red Leicester, along with the dijon mustard and a little salt and pepper.
  9. When the cauliflower is cooked, remove from the oven and transfer it into a smaller oven dish.
  10. Pour over the cheese sauce.
  11. If you are making this ahead, allow to cool, wrap in cling film and store in the fridge for up to 2 days.
  12. When ready to cook, add the remaining grated cheddar and panko breadcrumbs to the top.
  13. Bake in the oven at 200c for 20 minutes.
  14. Serve immediately.
